Baked Salmon and Rice Pilaf

Ingredients

2-4oz pieces salmon

2 cups white rice

1 leek washed and cut in small pieces

6 gloves garlic peeled and diced

½ cup oil

1 lemon

10 pecan halves

5 cups water

Spices

1 teaspoon Mrs. Dash

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

Directions

Baked Salmon

Preheat oven to 375F degrees. Place the salmon in a greased baking pan with the skin up. Slice the skin approximately 2in on three places, place the diced garlic in the sliced slots. In a meantime combine all the spices in a mixing bowl and mix well. Use half of the spices to sprinkle the pieces of salmon, cover with aluminum foil and place them in the oven for 20 minutes. Take them out of the oven and place the pecan halves on the top of the pieces of the salmon, put them back in the oven for 5 minutes more or until the pecans are baked-golden. Take them out of the oven and squeeze the lemon all over them.

Rice Pilaf

In a cooking pan place the oil and leek and sauté it for 5 minutes constantly stirring. Place the rice in with the leek and sauté together for 2 minutes constantly stirring. Add the other half of the spices and 5 cups of water, mix well cover and simmer for 10 minutes on low heat. Check if the rice is done – soft, if not mix well again, cover and simmer for 5 more minutes. The rice is done when is soft.

In a serving plate place the rice first and the salmon on the top
